I don't know how to make Humus, but if you want to enjoy most delicious Humus, I strongly recommend a small restaurant called BA'ADUNESS (parsley, in Arabic). Situated in Bialik St. 138 Ramat Gan, the restaurant is opened until, approximately, 14:00 (I guess until then the Humus is sold out). Anyway, when you finally get there, you have to stand in a queue for about 15 – 20 minutes, during which you stare hungrily at those lucky diners who already enjoy their Humus. And now it's your turn! The menu is very limited (I recall there are 3 options only). Personally, I recommend Humus with Full (cooked broad beans) with hard boiled egg. The chef adds to it onions, a secret formula of lemon and garlic, olives-oil, red paprika and of course parsley. Now you are the lucky one! Of course it's a self service restaurant, you find yourself a seat, and…. no doubt, it's worth the effort! Bon Appetite.
